Interactive dining: Anaviv’s Table to host ‘Italian sensory experience’

Anaviv’s Table, the unique new fine-dining, farm-to-table restaurant in Richmond where guests get an inside look into what happens in the kitchen, is set to host an Italian sensory experience of food and drink with special guest author/chef Roberto Forretti.

Chef Forretti will help introduce guests to food, and wine from the scenic region of Le Marche, Italy, which features excellent vineyards and is recognized for its cuisine rooted in the Mediterranean diet. Guests will experience an “interactive evening consists of a four-course meal, accompanied by fine regional wines and a concert performance of music from Les Marches,” according to restaurant spokesperson Jaime Dooley.

Appetizers will include a stuffed olive demonstration and guided olive oil tasting. The first course will feature a Legume Soup from the Sibillini Mountains followed by a demonstration by Chef Roberto on how to prepare fresh egg pasta.

The second course includes the chef’s handmade pasta. Chicken “Ncip-Nciap” — or a vegetarian option — comprise the third course. And dessert is cooked wine cake as well as a cooked wine tasting.

The evening will close with an Opera concert featuring songs from one of the most famous tenors from Le Marche region (Beniamino Gigli) performed by tenor Carlo Assogna.

“The goal of Chef Roberto Forretti and his colleagues is to create bridges and bring people of all cultures together through food and wine,” Dooley said in a statement. “The group will focus on educating guests about the Le Marche region as well as highlighting the benefits of a Mediterranean Diet.”
